Combava zest (powder)

Citrus Hystrix
Origin: Madagascar
Net volumes and weights: 50ml / 25g / 0.88oz

It is a citrus fruit native to the Sunda archipelago in the Moluccan Sea. It is the name of the tree and its fruit. It was introduced to the Indian Ocean, in Mauritius, by Pierre Poivre at the end of the 18th century.

The one we offer is grown in Madagascar.

We offer you a high quality product, zests finely taken from selected fruits and which have not undergone any chemical treatment. These zests are slowly dried in the sun which gives them this incomparable aroma made of freshness and delicacy with a dominant of lemon, lime but with sweet notes evoking candied citron zests. A lovely camphorated and minty smell, reminiscent of eucalyptus, with a pungent touch reminiscent of ginger.

Usage tips

Use the powdered zest on fish or white meat carpaccio, fish, shellfish, scallops. It goes perfectly with coconut milk and will be essential for making a curry. It will flavor fruit desserts, creams, ice creams and sorbets.

Use the zest in cooked dishes, baked fish, broths, soups and stews, in the water used to cook rice, for marinades and infusions.
