This plant is native to India, the turmeric that we offer was grown in Madagascar, which has made it one of its specialties.
This turmeric powder is exceptional and has nothing to do with the vulgar powders you know, which are only used to color dishes. The rhizomes are coarsely peeled, which is rarely done, to keep only the heart, the part richest in curcumin and essences, then slowly dried in the sun and then reduced to powder, to obtain this particularly fragrant spice.
Its powerful smell is slightly pungent, marked with spices, minty, fruity and floral, acrid with a pleasant bitterness.
This spice is a powerful dye like saffron. It is also called "bourbon saffron" or "Indian saffron".
It goes very well with many spices and with basil, but also with cauliflower, potatoes, rice, lentils, beans, poultry, eggs, white-fleshed fish, mussels and tomato-based sauces and subtly colors mayonnaise, scrambled eggs, cream sauces, baked cheeses and gratins.
